It’s the season for a lot of aromatic apples. I love cooking with apples, for example, to this relish. The recipe is very easy so it’s just getting started. Use this relish both with cheese, white meat and anything else that needs a little twist.
You will need these ingredients
2 onions chopped fine
lots of thyme
4 large apples chopped fine (we used Belle Boskoop)
a bit of chili (if needed;-)
2 tablespoons grated ginger
1 1/2 cup eco sugar
1/2 cup vinegar
1 teaspoon salt
1 small squeeze of oil
Add onions, ginger, thyme and chili in a pot on low heat and wait until the onions are tender. Add sugar and vinegar and bring to a boil (still slow)
While the onions simmer and become tender, you can chop the apples and add them. They need to be added before they become brown coloured. Bring slowly to boil and let simmer for 5 minutes
Season to your taste and add if necessary add more sugar, chilli, etc., if needed. Remember that the entire mass becomes more “round” when you storage it – it does not matter if there is a little bite.
Remove from heat and pour into clean glass
The cooking time, depending on the apples you use, should not be too long – do not let it turn into moss and leave like a little bite in the apples;-) Vinegar can be apple cider vinegar or what you like.
